The problem with my weight loss is that 20 of the 40 lbs went in 5 days-- consequence of gastric surgery. It took 5.5 months before I could eat a “normal” meal at one setting.

That explains the reason for the weight loss.
I don’t know the reasons for your gastric surgery, but saying that you can’t eat ‘normal’ meals any more also explains why you are not regaining the weight you lost.

But the question is, how to reverse th e effects of the surgery? I can't undo the surgery.

Of course you can’t ‘undo’ the surgery.
And as we don’t know the reasons for your surgery and what the procedure was we can’t possibly give you a definitive explanation.
Only your medical team can do that.

I believe Kb0000 said it was 5.5 months before being able to eat 'normal' meals. Indicating that 'normal' meals can now be consumed. Not that 'normal' meals can't be eaten 'any more' :S

A healthy diet from a professional dietician who also knows all your history is advisable for you.
I eat a lot of fruit now now some fruits do have high sugar levels so I was told what not to eat and what do to eat, It works my cholestral dropped my sugar levels dropped to normal and my weight which only fluctuated a bit has now balanced out.
I also drink plenty of real fresh Lemon and Lime juice made with real lemons and limes not bottled stuff from the shops as that isn't really good for you.

I do know a professional dietician who would be most probably able to help you if you let her know all your details as past diets your surgery age etc. She has helped many people with diets to suit their needs, and had great success.
She charges for her services so you may as well use the NHS services and get it all for free.

End of the day listen to the professionals they are professionals for a reason.

He also said ….”I used to take down a 8 oz burger with ease. Now a 3 oz burgers fills me up-- no room for fries”

A contradiction on his part in that case. Probably due to the gastric surgery reducing capacity hence the 'full' feeling
after consuming a much smaller amount. So not a 'normal' meal. Confusion reigns.

Mentioning the gastric surgery in OP would have been helpful information.

Of course you will lose weight fast in the beginning after such surgery and of course you will eat smaller meals long term, that is the whole point of surgery is it not?

Presuming you had it done for weight loss reasons and not a partial gastrectomy for cancer or suchlike?
Surely dietican support is part of your follow up plan?

If not, do get a referral to one and get specific advice for your situation.

Meat doesn't effect blood sugar unless you have it between 2 burger buns with some fries and a milkshake.
